Vegan Tuna Nicoise Inspired Salad

With the weather finally starting to warm up, we’ve been craving new salad recipes. Since we’re always hungry around here (it’s seriously a main topic of conversation with us) we wanted to create something nourishing yet filling and were craving something similar to a tuna nicoise salad. The red potatoes and artichokes add a little more texture that really make this feel like a full meal. The base of the dressing is similar to the simple salad dressing, but this one has a yummy mustard vinigiarette taste. We’re thinking this will put a little spring in your step! 😉

 

INGREDIENTS (all organic):

Salad:

  • Romaine
  • Cucumber
  • Green Beans
  • Red Potatoes
  • Black Olives
  • Red Onion
  • Tomatoes
  • Artichoke

Dressing:

PROCESS:

  1. Cut red potatoes in half, bring water to a boil, add in potatoes and then cover and reduce to a simmer for 15-20 min
  2. Combine all salad dressing ingredients in blender or bowl
  3. Chop all salad ingredients
  4. Toss and enjoy!
