Happy Taco Tuesday! Mexican cuisine is one of my all time favorites, as we all know…I’m starting to think I need a food section just dedicated to Mexican! Anyway – my best friend @chrissygodwin is a whiz in the kitchen (especially with a killer vegan dish) so last time she was in town I had to try her tacos. There’s nothing like getting to spending time in the kitchen with your BFF.

There are a lot of components to this one, but the end result is so worth the extra effort. The combo of sweet and salty from the sweet potatoes and the lime black beans was next level! Next time, I might make a double or (let’s be honest) triple serving of the pico because it was that good. I also love to make extra to have on hand throughout the week with chips, to throw on top of our Mexicali salad (linked here) or my signature MWH Guac recipe (linked here).

  • Siete mini tortillas
  • 2 sweet potatoes
  • 1 can black beans
  • 1 tomato
  • 1/4 white onion
  • 1 jalapeno
  • 1/4 cup cilantro
  • 1 avocado
  • Juice of 1 lime
  • 1 tbs. coconut oil
  • 1 tbs. garlic powder
  • 1 tbs. chili powder
  • 1 tbs. paprika
  • 1 tbs. chipotle powder
  • 1 tbs. cumin
  • Himalayan salt to taste (I like a lot!)


For Sweet Potatoes:

  1. Peel and dice sweet potatoes
  2. Place in roasting pan
  3. Dab coconut oil over diced tomatoes
  4. Season with garlic powder, chili powder, chipotle powder, and paprika
  5. Mix potatoes, coconut oil, and seasoning thoroughly until potatoes are coated evenly
  6. Place lid on roasting pan
  7. Bake 25-30 mins at 350 degrees

For Black Beans:

  1. Open, drain, and rinse can of black beans
  2. Pour beans into stove-top pot
  3. Squeeze lime juice over beans
  4. Season with cumin
  5. Bring to soft boil and then turn down to simmer until beans are wet, but not runny

For Pico:

  1. Chop tomato, white onion, jalepeño, and cilantro
  2. Drizzle over lime juice
  3. Mix

For Tacos:

  1. Warm tortillas
  2. Add on sweet potatoes
  3. Add on sliced avocado
  4. Add on Pico
  5. Enjoy!
