Taco Tuesday…That’s still a thing right!?

I’m all about the food prep and having ingredients on hand to throw something together fast – especially at the end of this pregnancy where the last thing I want to do is cook a meal from scratch. One of my favorite cuisines is by far Mexican food. I love Tacos. I have these for lunch or dinner, and they’re so easy to capture that IG pic with this cute little taco rack. Find similar one linked here. And PS this guac recipe is my signature – so so good!

INGREDIENTS: (ALL ORGANIC)

  • Black beans
  • Lettuce
  • Tomato
  • Cilantro
  • Siete coconut flour tortilla
  • Guacamole (recipe here)

PROCESS:

  1. Cook beans
  2. Prep guac
  3. Heat up tortilla over stove
  4. Cut up lettuce, tomato and cilantro then add to heated tortilla
  5. Add guac on last
