“SALAD” IN A WRAP

This has been a standard go-to lunch playing over and over again up in here. It’s a salad in a wrap which makes it equal to a greater ratio of greens to carbs (great for digestion). Satisfying and filling every. damn. time. This combo keeps you coming back for more. And more. 

Option 1:

INGREDIENTS (ALL ORGANIC WHEN POSSIBLE):

  • Wrap
  • 1/2 avocado
  • 1/2 tomato
  • Handful of diced peppers
  • Handful of black olives
  • 2 tbsp. Vegenaise
  • 2 tbsp. creamy avo + lime dressing (recipe below)
  • 1 tbsp. hummus
  • About 2 spoonfuls of sauerkraut 
  • About 2 spoonfuls of medium salsa
  • A few big handfuls of spring lettuce
  • Nacho Siete Chips
  • Sprinkle of salt
  • Squeeze of lemon

PROCESS:

  1. Thinly slice tomato and chop peppers
  2. Spread Vegenaise on wrap
  3. Add on spring lettuce
  4. Add on tomato
  5. Add on peppers and olives
  6. Add on avocado
  7. Add on sauerkraut and then salsa
  8. Squeeze a little bit of lemon
  9. Add on creamy avo + lime dressing
  10. Hit it with a little salt
  11. Add on Hummus
  12. Add on chips (3 to be exact!)
  13. Wrap (and try not to break it but who cares if you do; it’s all ending up in the same place!)
  14. Enjoy!

Creamy Avo + Lime Dressing: 

INGREDIENTS (ALL ORGANIC WHEN POSSIBLE):

  • 1 avocado
  • 1/2 clove garlic peeled or white onion 
  • 1/4 cup roughly chopped cilantro (optional) or parsley 
  • 1/4 cup chopped red bell pepper 
  • 1/4 cup filtered water
  • 1 tbsp. fresh lime 
  • 1 tbsp. white vinegar 
  • 3 tbsp. olive oil
  • 1/4 tsp. sea salt
  • 1/4 tsp. ground black pepper

PROCESS:

  1. Place all the ingredients in a food processor or blender.
  2. Process until smooth, stopping to scrape down the sides a few times. 
  3. Good for 3-4 days in an airtight container 

Option 2:

INGREDIENTS (ALL ORGANIC WHEN POSSIBLE):

PROCESS:

  • Warm Hillary’s artichoke burger either in microwave (I know, I know…not the best) or for about 1 minute in toaster.
  • Chop tomatoes, cucumbers, hearts of palm, and lettuce.
  • Mix a hint of my Simple Salad dressing with greens.
  • Slice veggie burger into small pieces.
  • Heat wrap by placing it over burner for a few seconds and flip.
  • Spread about 2 tbsp. of Vegenaise on wrap.
  • Put chopped greens next so that you can smush them down so everything fits.
  • Place in 1/4 avocado, tomato, cucumber, and hearts of palm in wrap.
  • Add in burger.
  • Add slice of Violife sliced cheese.
  • It’s insane!

OPTION 3:

INGREDIENTS (ALL ORGANIC WHEN POSSIBLE):

PROCESS:

  • Chop tomatoes, avocado, hearts of palm, and lettuce.
  • Combine my Simple Salad dressing with Brizo dressing and mix with greens.
  • Heat wrap by placing it over burner for a few seconds and flip.
  • Spread about 2 tbsp. of Vegenaise and a ton of hummus on wrap.
  • Put chopped greens next so that you can smush them down so everything fits.
  • Place in 1/4 avocado, tomato, pico de gallo and hearts of palm in wrap.
  • Enjoy!
