Rice & All the Veg

It’s literally crazy how satisfying I find a meal like this. For me, the simpler the ingredients (meaning whole plant foods) and easier a recipe is to make, the easier it is to digest. And, I’ve said it once, so you know I’ll keep saying it: I <3 carbs! I’m living proof that you don’t need to be scared of them! If you want to learn more, The China Study is really eye opening.



  • Prepare rice according to package
  • Chop all veggies
  • Spray pan with oil so that the food doesn’t stick
  • Mix veggies and rice with a little avocado oil and Miyoko’s Butter
  • Add in salt, pepper, and a few squeezes of fresh lemon
  • Enjoy!
