
Who doesn’t love a good quesadilla–cheesy, crispy, and with allll the veg. Pair it with a big salad (this one is Melissa’s go-to) and it’s simple but so satisfying!
INGREDIENTS (ALL ORGANIC WHEN POSSIBLE):
- Tortilla
- Handful of spinach
- Handful of onion
- Violife Mozzarella Shreds
- Medium salsa
PROCESS:
- Dice spinach and onion
- Add a couple tbsp. of vegan butter into a warm pan
- Take tortilla and place on bottom after butter has melted
- Add a tiny bit of avocado oil on top
- Add any vegan cheese of your choice
- Add diced tomatoes, diced onions, and chopped up baby spinach
- Add another tortilla to the top (bottom should stay on for 2 min)
- Flip when lightly golden (flip it a few times until cheese is melted)
- Enjoy!
- Optional–you can do this in toaster oven as well
