Plant Based Quesadilla

Who doesn’t love a good quesadilla–cheesy, crispy, and with allll the veg. Pair it with a big salad (this one is Melissa’s go-to) and it’s simple but so satisfying! 

INGREDIENTS (ALL ORGANIC):

PROCESS:

  • Dice spinach and onion
  • Add a couple tbsp. of vegan butter into a warm pan
  • Take tortilla and place on bottom after butter has melted
  • Add a tiny bit of avocado oil on top
  • Add any vegan cheese of your choice 
  • Add diced tomatoes, diced onions, and chopped up baby spinach
  • Add another tortilla to the top (bottom should stay on for 2 min)
  • Flip when lightly golden (flip it a few times until cheese is melted)
  • Enjoy!
  • Optional–you can do this in toaster oven as well
