Elevated Avocado Toast Options

We’ve been rotating these brunch recipes for the weekend, but obviously during the week too because who knows what day it is anyways?! Whether you like a salty or sweet brunch situation, we’ve got you covered.

Potato + Mushroom Avo Toast

This was next level. Like I’m already planning on making it again next level type of good. Elanor agrees.

INGREDIENTS:

PROCESS:

  1. Slice potatoes, mushrooms, onion, and garlic
  2. Pour about 1 tbsp. of avocado oil in pan on low heat
  3. Sauté potato, mushrooms, onion, and garlic
  4. Slice bread and toast
  5. Smash avocado on toast
  6. Place potatoes, mushrooms, and onion on top
  7. Sprinkle on nutritional yeast, sea salt, and a few squeezes of fresh lemon
  8. Enjoy!

Eggs-Plant Based Style

Sometimes I crave eggs. When I do, I love Just Eggs vegan substitute. It’s a game changer.

INGREDIENTS:

PROCESS:

  1. Prepare Just Eggs according to directions on packaging.
  2. Mix in spinach at the end.
  3. Toast bread.
  4. Spread avocado on bread.
  5. Put eggs and spinach creation on top.
  6. Salt, lemon, and nutritional yeast to taste!

Bagel Sandwich

Filling, delicious, and versatile. We feel like we’re at our favorite NY bagel place when we close our eyes for that first bite.

INGREDIENTS:

  • Whichever bagel you like best! (Pumpernickel, Sesame, Whole wheat are go-to’s)
  • Tomato
  • Onion
  • Cucumber
  • Mixed greens
  • Avocado
  • 2 tbsp. Kite Hill chive cream cheese (we also love Miyokos and Monty’s tofu scallion cream cheeses as well!)

PROCESS:

  1. Scoop out some of the bagel so that everything fits and toast.
  2. Slice tomato, onion, cucumber, mixed greens, avocado
  3. Put cream cheese on warm toasted bagel.
  4. Add in sliced veggies
  5. Enjoy!
