Cauliflower Gnocchi & Shiitake Bacon

I think I’ve officially been living under a rock because I just discovered Trader Joes, more importantly their cauliflower gnocchi. If you haven’t tried it yet (don’t worry this was me about two weeks ago) you have no idea what you’re missing. This recipe was made up on a whim but turned out to be such a delicious warming meal when you want to get a little creative in the kitchen. We made this for lunch and used our pesto sauce. The dish is so versatile, really any sauce would work. *Pro tip there’s a few different ways to make the cauliflower gnocchi but we found the best way is to spray a little avocado oil in a pan and heat it up on medium/high for about 5 minutes to get them a little crispy (you can use water but found this made them soggy!)

INGREDIENTS: (ALL ORGANIC)

INGREDIENTS FOR TAHINI CHEESE SAUCE: (ALL ORGANIC)

PROCESS:

Shiitake Bacon:

  1. Preheat oven to 350
  2. Cut shiitake mushrooms super thin and place on baking sheet
  3. Spray avocado oil and add salt, pepper and dash of paprika (mix together with hands on baking sheet and then separate mushrooms throughout the sheet)
  4. Bake for 30-35 min (should be a little burnt looking/dark brown when ready)

Cauliflower Gnocchi:

  1. Spray pan with thin layer of avocado oil and place frozen gnocchi in to cook for about 5 minutes or until pieces get slightly browned
  2. Add in spinach to cook down
  3. Drizzle tahini sauce in and mix all together
  4. Place in bowl and sprinkle shiitake bacon on top + additional nutritional yeast if desired

Tahini Sauce:

  1. Blend all ingredients together in a food processor until well combined. If sauce is thicker than desired, slowly add in water to thin.

    Hi – I notice the ingredient list says “paprika” but then paprika is not in the recipe instructions , however , cayenne is….does anyone know which ingredient should be used ? Cant wait to make this and don’t want to screw it up!
