Baked Falafel via @soulfulsophia

This recipe from @soulfulsophie from soulfulsophia.com is one of my favorite plant-based recipes. It’s a great source of protein and fiber. I love adding these falafel patties to salad bowls or a good ole pita (especially pregnant!). The fresh herbs and spices give the patties so much flavor. Falafel is usually deep fried but this version is baked!

INGREDIENTS (ALL ORGANIC):

  • 2 cans of chickpeas (drained and rinsed)
  • 1 cup of fresh chopped parsley
  • 1/2 cup of oat flour
  • Chia egg (1 tbsp of chia seeds soaked in 3 tbsp of water for 5-10 minutes until it develops a gel like consistency)
  • 4 tbsp of olive oil
  • 2 cloves of garlic
  • Juice from 1 whole lemon
  • 2 tbsp of sesame seeds
  • Spices: salt, pepper, cumin (lots!), paprika

PROCESS: (all in food processor)

  1. Add in the chickpeas and pulse that together. Don’t over do it! You don’t want it to get too doughy
  2. Slowly add in the oil, lemon juice, flour, chia egg and spices
  3. Once it’s all pulsed together, add in sesame seeds and mix it in well for some texture
  4. Roll the resulting mixture into your desired “patty” shape and place them on a baking sheet (sprayed with cooking spray)
  5. Bake at 360 degrees and flip mid way through when they start to brown
  6. 25-30 minutes cooking time but keep an eye on them (when they start to brown on the edges, they’re ready)
