“MELISSA’S CAULIFLOWER FUSILLI ALFREDO” VIA BONBERI

Ingredients (All Organic)

  • 1 clove minced garlic
  • 1 tbsp coconut oil
  • 1 cup chopped cauliflower
  • 1 cup chopped broccolini
  • 1/2 cup frozen peas
  • 1 box brown rice pasta
  • ¾ cup coconut milk (unsweetened)
  • 1 tbsp sea salt
  • Pepper to taste
  • Pinch garlic powder
  • 3 tbsp nutritional yeast
  • ½ lemon squeezed

Process

  1. Saute the minced garlic with ½ tsp coconut oil for 3-4 minutes, until brown
  2. Add the coconut milk and bring to a boil
  3. Add sea salt, pepper, nutritional yeast and cauliflower, cook until thick
  4. Transfer all ingredients to blender
  5. Add ½ lemon and blend until smooth
