The vibrant colors in this bowl are everything. Simple and delicious. My homemade vegan pesto adds incredible flavor to the rice and beans. No added oils, just pure and simple ingredients for a nourishing lunch or dinner.

Ingredients (All Organic)

  • 1/2 cup already cooked brown rice
  • 2 tbsp vegan pesto (Click Here) for Pesto Recipe
  • 4 chopped romaine leaves
  • 1/2 avocado
  • 1 small tomato
  • 2 tbsp guacamole (Click Here for my guac recipe)
  • Topped with medium salsa- chopped tomatoes, chopped cilantro and onions with 1/2 squeezed lime, sea salt and pepper to taste
  • 1/3 cup of black beans (Click Here) for how to prepare beans


  1. In a large bowl, add rice with pesto sauce and all chopped veggies
  2. Add guacamole and black beans on top of salad in the center of the bowl
