VEGAN PESTO

Ingredients

  • 2 cups basil (tightly packed)
  • ½ cup pine nuts
  • 3 cloves garlic
  • ½ cup olive oil
  • ¼ cup nutritional yeast
  • 1 tbsp lemon juice
  • 1 tsp salt
  • Pepper (to taste)

Process

  1. Toast the pine nuts on the stove at a medium heat for 4 minutes
  2. Add all ingredients (including the pine nuts) to blender
  3. Blend for about 40 seconds, until smooth
  4. Mix in with pasta, or use as you wish!
