With school back in session I love trying healthy plant based recipes that are kid friendly. Laurie Lloyd of LivLight’s Back to School Balls are absolutely delicious and perfect for a snack to bring to school or eat after. These balls are nut free, dairy free, soy free, gluten free, and vegan! Be sure to check out LivLight’s blog for more delicious kid friendly recipes!


  • 2 cups of gluten free oats (I use Bob’s Mill Old Fashioned
  • 1 1/3 cups of unsweetened finely shredded coconut
  • 1 cup of sun butter*
  • 1 cup of ground Flax Seed
  • 2/3 cup of maple syrup
  • 3 cups of dairy, nut & soy free mini chocolate chips (I use Enjoy Life Brand)
  • 1/2 tbs vanilla extract

*Can use another nut butter if there are no nut allergies*


  1. Mix all ingredients in a large bowl until well combined
  2. Place mixture in the refrigerator for 20 minutes
  3. Roll into bite sized balls and place on parchment paper lined baking sheet
  4. Freeze for one hour and then remove the balls from parchment paper
  5. Place in a glass lock container with lid (they can be frozen for up to 3 months)

*Best if eaten a few minutes out of the freezer but will also work great for school lunches*

    I’ve read a lot of articles saying you should limit your coconut intake. Do you add coconut flakes here for flavor, or is there a health benefit I’m missing?
